The charismatic Alessandro Pavoni has opened Australia’s eyes to the breadth of regional Italian food and the glories of a true risotto. He trained in Brescia but has worked in Michelin-starred establishments such as la Rotonde in France and Villa Fiordaliso on Lake Garda as well as other awarded venues around the world. After coming to visit Australia in 2002, and learning English he was the Park Hyatt Sydney's Executive Chef from 2005-2009 when he stepped on on his own to great acclaim. He opened his own restaurant, Ormeggio at The Spit in 2009.
In 2013, Alessandro joined forces with one of Sydney's most respected restaurateurs, Bill Drakopoulos of the Aqua Dining Group.
Drakopoulos, whose venues include Aqua Dining at Milsons Point and the Ripples Cafes located across Sydney’s iconic waterfronts, said this new alliance was a natural fit. “Ormeggio’s waterfront location at The Spit was a major drawcard; it’s one of Sydney’s truly special venues,” he said. Pavoni notes "Bill has been a regular and local guest of Ormeggio for years."
On breaking news of their new partnership, Drakopoulos said “Over the years Alessandro and I have developed a healthy respect for one another. We are both professional restaurateurs with different and complimenting strengths. We are very excited to pool our experiences and skills and are looking forward to our future achievements together,” .
